Ingredients:
For the Chicken Filling:
- 2 boneless chicken breasts, thinly sliced or shredded
- 1 tablespoon oil
- 1 teaspoon ginger paste
- 1 teaspoon garlic paste
- 1/2 teaspoon turmeric powder
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1/2 teaspoon red chili powder (adjust to taste)
- Salt to taste
- 1 tablespoon yogurt
- Juice of half a lemon
- Chopped cilantro (coriander leaves) for garnishing
For the Chapatis (Flatbreads):
- 2 cups whole wheat flour
- Water (as needed)
- Salt to taste
- Oil or ghee (clarified butter) for cooking
For Assembling:
- Sliced onions, tomatoes, and lettuce
- Mint chutney or sauce of your choice
Instructions:
1. Prepare the Chicken Filling:
- Heat oil in a pan over medium heat.
- Add ginger and garlic paste, and sauté for a minute until fragrant.
- Add chicken slices or shreds, and cook until they turn white and start to brown slightly.
- Add turmeric, cumin, coriander, red chili powder, and salt. Mix well.
- Cook for a few minutes until the chicken is fully cooked and well-coated with the spices.
- Add yogurt and lemon juice. Stir and cook for another 2-3 minutes.
- Garnish with chopped cilantro. Remove from heat and set aside.
2. Prepare the Chapatis:
- In a bowl, combine whole wheat flour and a pinch of salt.
- Gradually add water and knead to form a soft dough. The dough should not be too sticky or too dry.
- Divide the dough into small lemon-sized balls.
- Roll each ball into a thin, round chapati using a rolling pin and a little dry flour to prevent sticking.
- Heat a griddle or non-stick pan over medium-high heat.
- Place a chapati on the hot griddle and cook for about 1-2 minutes until bubbles start forming.
- Flip the chapati and cook the other side until brown spots appear. You can apply a little oil or ghee on both sides for a nice texture and flavor. Repeat for all chapatis.
3. Assembling the Rolls:
- Lay a chapati on a clean surface.
- Place some of the prepared chicken fillings in the center of the chapati.
- Add some sliced onions, tomatoes, and lettuce on top of the chicken.
- Drizzle mint chutney or your preferred sauce over the fillings.
4. Rolling the Chapati:
- Fold the sides of the chapati over the fillings, making sure they overlap slightly.
- Start rolling from the bottom, tucking in the fillings as you go.
- Roll tightly until you have a secure and compact roll.
5. Serving:
- Your Chicken Chapati Roll is now ready to be served.
- You can wrap it in parchment paper or aluminum foil to make it easier to hold and eat.
- Serve immediately with extra mint chutney or sauce on the side.
